The best-known commercial training institute in security operations, and home of the GIAC certifications and the Internet Storm Center.
SANS courses and their GIAC exams are the operational counterpart to vendor certifications: incident response, forensics, detection, offensive skills. Its Internet Storm Center is a long-running community sensor and daily-diary institution, and its free resources (posters, cheat sheets, reading room) circulate far beyond paying students.
