The address a host sends to when the destination is not on its own network - and, more generally, any device that translates between two systems.
The word carries two meanings and confusing them wastes time. A default gateway is a host's exit: a configured address, usually a router, used for anything outside the local subnet. An application gateway is a translator between protocols or formats. The first is a routing decision made by the sender before any router is involved, which is why a wrong gateway looks like a total failure from one machine while the network is fine.
